Back to Roots: Cooking, Archaeology, and Ecology Experience

More than just a cooking class, this experience is a way to get to know the story of two talented scholars, an archaeologist and a marine biologist who, after many years of working away from Sicily, decided to return to their homeland and live it to the fullest. To do this, they transformed their historic family farmhouse into a perfect venue for their passions, restoring the old Byzantine hypogea and building an aquaponics greenhouse, where aromatic herbs and vegetables grow in a sustainable environment that respects centuries-old farming techniques practiced in the region.

Amidst the rocky hills of the Noto countryside overlooking southeastern Sicily, you'll spend a delightful morning with family. You will start with a walk through the estate which, besides enchanting you with its history and natural wealth, will allow you to collect wild herbs and those grown in the aquaponics greenhouse to take with you to the kitchen.

Once home, you will be greeted with a welcome aperitif before putting on your aprons and getting hands-on in the kitchen. As a good archaeologist, the owner will unveil ancient Sicilian recipes long lost to time, which you will bring back to life with your own hands. From fresh pasta to traditional Sicilian pestos, from tomato sauce to iconic almond sweets, these recipes will be told with anecdotes related to Noto and its territory.

Finally, you’ll gather around the table to experience the ritual of the great festive lunches through the dishes that you’ve cooked together.
