Family stories and recipes at an olive manor farm

Join us at a magnificent 19th-century manor farm in the countryside of Chiaramonte Gulfi, where you will start this private cooking class with a serene stroll through the local family's olive grove. You’ll be bewitched by the beauty of the centuries-old olive trees, whose twisted trunks have borne witness to the long history of the olive oil production in Chiaramonte.

You will then move into the old family’s oil mill to learn about the old pressing process, and taste the olive oil extracted from the precious “Tonda Iblea” olive variety.

Meanwhile, the family’s cook will be waiting for you in the kitchen, where she will share with you the secrets of the Hyblaean cooking, and encourage you to make “scacce” (durum wheat pastries stuffed with all sorts of delicious fillings), fresh pasta and other family recipes.

Finally you will enjoy a splendid lunch, tasting the fruits of your labors by sampling what you prepared along with other scrumptious specialties such as “olive cunzate” (olive seasoned) and ricotta cheese pancakes, a true joy for the senses!
